Store uncooked eggs in their carton, large ends up, in the coldest part of your refrigerator (not in the refrigerator door) for up to 1 month. They will keep for 4 weeks beyond the carton date; but for the best flavor, use them within 1 week. To tell if an egg is fresh, place it in a bowl of salted, cool water. If it sinks, it's fresh -- if it floats, discard it.
