Ruby Sunshine targets summer opening for all-day brunch restaurant in Matthews

MATTHEWS, N.C. — Ruby Sunshine is expanding its local footprint to Matthews. The New Orleans-based breakfast concept is adding a 3,600-square-foot restaurant at 101 W. John St. this summer.

Plans call for a 160-seat restaurant, including a 40-seat patio. The design will incorporate Instagrammable, wall-to-wall murals.

“The downtown Matthews area is a well-planned, well-developed dining and shopping experience, and we are thrilled for Ruby Sunshine to become a part of this neighborhood,” says Peter Gaudreau, CEO of Ruby Slipper Restaurant Group.

Expect Ruby Sunshine to dish up breakfast all day, with Big Easy-inspired twists on Southern brunch classics and cocktails.
