Pilot Brewing taps into Plaza Midwood

CHARLOTTE, N.C. — This Plaza Midwood brewery is piloting its own course.

Pilot Brewing aims to carve out a niche focused on small-batch experimental brews. It opened Saturday at 1331 Central Ave.

That 1,900-square-foot brewery is part of the One305 Central project, at the corner of Central and Clement avenues.

Husband-and-wife team Jeff and Rachael Hudson are behind that roughly $400,000 venture.

“I just knew we wanted to do it for ourselves,” Rachael says. She’s also head brewer.

Pilot Brewing builds on her love of craft beer, including stints over the last seven years at award-winning breweries including NoDa Brewing Co. in Charlotte, Hardywood Park Craft Brewery in Virginia and Left Hand Brewing in Colorado.
